1/3 cup lemon juice
1/4 cup Artisana Raw Organic Tahini
3 tablespoons chopped green onion
2 tablespoons chopped flat-leaf parsley
1/4 teaspoon ground cumin
2 garlic cloves, peeled
Fresh parsley sprigs or cilantro (coriander) for garnish
Lavosh (cracker bread) or pita bread, quartered
PREPARATION:
In a food processor, combine the garbanzo beans, lemon juice, tahini (sesame
seed paste), onion, parsley, cumin, and garlic. Add salt and pepper to taste and blend until combined. (optional) Pour into a serving dish. Cover and refrigerate at least 2 hours for flavors to blend. Before serving, garnish with fresh parsley or cilantro. Serve on toasated pita bread, tortilla chips, or fresh raw and organic vegetables. It is really good with carrots. If you serve it with carrots, be sure to get alot because people will eat them all first. You can also use it on a crazy-big salad. Yield: about 2 cups
